Ingredients (for 2 servings)
Main Ingredients
- 200 g rice noodles
- 150 g shrimp or chicken breast (cut into pieces)
- 2 eggs
- 100 g bean sprouts
- 2 spring onions
- 2 tbsp vegetable oil
Sauce
- 2 tbsp tamarind paste
- 2 tbsp fish sauce
- 1 tbsp palm sugar
- 1 tsp soy sauce
Toppings
- Chili flakes (optional)
- Lime wedges
- Fresh coriander
- 2 tbsp roasted peanuts (chopped)
Preparation
- Soak rice noodles according to package instructions
- Heat oil in a pan or wok
- Sauté shrimp or chicken, set aside
- Add eggs to the pan and let them set lightly
- Add noodles and mix with the sauce
- Add meat/shrimp back in
- Stir in bean sprouts and spring onions
- Toss briefly and serve
