Ingredients

- 300 g rice noodles (Khanom Jeen)
- 300 g fish (e.g., cod or mackerel, cooked and shredded)
- 1 pack Jarome Red Curry Paste (Southern Style)
- 400 ml coconut milk
- 300 ml water
- 1–2 tbsp fish sauce
- 1 tsp sugar
- 2 kaffir lime leaves (optional)

- Boiled eggs (halved)
- White cabbage (finely shredded)
- Long beans (chopped)
- Cucumbers
- Thai basil
- Fresh herbs and edible flowers (optional)

Preparation

Cook the Curry

1. Heat coconut milk and water in a pot.
2. Stir in curry paste until fully dissolved.
3. Add fish and lightly mash it to combine with the sauce.
4. Season with fish sauce and sugar.
5. Add kaffir lime leaves and simmer briefly.

- Briefly warm rice noodles in hot water
- Transfer to a bowl
